1. Zucchini Noodles

Ingredients:

  • 1 large zucchini
  • 1/2 chopped white onion
  • 1 chopped leek
  • Near about 1 tablespoon of olive oil
  • 1 cup of tomato puree near about 
  • Salt and pepper as necessary
  • For garnishing: Herbs

Directions:

First of all slice the zucchini in the ribbon shapes or in noodle shape. Then put a pan on the oven and heat it. Put some olive oil in the pan.

Add the chopped leek and onions in the pan and stir them. Season with salt and pepper and cook until the onion looks translucent.

Add the tomato puree to it and mix them all well. Cook for 2-3 minutes.

Finally, take out the sauce and put it over the zucchini. The warm sauce will soften the Zucchini. Serve after 1-2 minute.

2. Cheesy Stuffed Tomatoes 

Cheesy Stuffed Tomatoes are very healthy and good for your health. It is one of those healthy lunch recipes which you can try in your house.

Ingredients:

  • Near about 6 medium sized tomatoes
  • 3/4t cup roughly chopped feta
  • Near about 1 tablespoon of Olive Oil
  • 1 handful of parsley
  • Salt and Pepper for taste as necessary

Directions:

Preheat the oven to 400 degrees.

Crop the tomatoes from the middle and make it look like cups. Do not put the caps of tomatoes to the dustbin. Keep them aside.

By using a spoon, take out the pulp of the tomatoes of the middle. Put them aside.

Grease a glass with olive oil and put the tomatoes in it

Take a bowl and put the feats in it. Put chopped parsley in it and mix them well.

Now take the tomato cups and fill them with feta-parsley mixtures. Season it with salt and pepper. Put little olive oil.

Place the caps back on the tomatoes and bake them for 10 minutes.

3. Mushroom & Olive Veggie Burger

Another beautiful and mouth-watering burger recipe is Mushroom & Olive Veggie Burger. It is very delicious and healthy lunch recipes too. Burgers are very favorite of children’s also. So you can cook it for your children. I’m sure, they will surely enjoy it.

Ingredients:

  • Near about 8 ounces of quartered baby Bella mushrooms, 
  • 2 tablespoon of olive oil,
  • 1/2 medium sized, diced onion, 
  • 3/4th cup of cooked lentils
  • 10 kalamata olives with pits removed
  • 1/2th cup of ricotta cheese
  • 1 cup of panko breadcrumbs
  • 1 egg near about 
  • 1 tablespoon white wine vinegar
  • Salt and pepper

Directions:

Take a pan and put it on medium heat. Put 1 tablespoon of olive oil in it. Add onions, mushrooms, Salt, and pepper in it and cook well until they get brown. Cook for 5 minutes.

Take a blender and blend mushroom, lentils, olives, ricotta, breadcrumbs 1/2th cup, egg, and vinegar together very well. But there should be some chunks remain left.

Now put it into the refrigerator for 1 hour. Or if you are in a hurry, you can put it for 10 minutes also.

Now take the burger patties and put the mixture into it. If the mixture is very liquid, then add up the extra breadcrumb and make it in shape.

Now take another pan and heat it with olive oil. Fry the burgers both sides well, till they get golden brown.

Serve the healthy and delicious burger.
